A French inspired Thanksgiving dish LOCAL!

Posted on November 29, 2013 at 9:01 AM Comments comments (149)
Turkey  Chauteubriand,  Salad Nicoise, for a Thanksgiving feast!
Every ingredient used to prepare these dishes was purchased this week at my local farmers market from local farmers directly! I barley step foot in a big corporately own grocery store. Instead i enjoyed a beautiful morning meeting my own personal local agriculture team! The flavors, nutritional value and pure beauty of these products could not be beat! I have the deepest gratitude for all the endless back breaking work that my local farmers put in to provide my community with safe and super nutritious foods!
Locate your own farmers market at Many farmers markets in colder regions now have indoor markets selling hot house produce, fresh dairy and proteins. Bring the entire family, kids LOVE the farmers markets!

Growing your own micro greens is so easy and fun. All you need is the dirt and some seeds. experiment with different herbs and greens. Picture here are red beet micro greens ready to harvest with their first true set of leaves. They only need 10-14 days to harvest and they look beautiful in salad or as a garnish. Loaded with vitamins and mineral!! If you want to give them an add boost, fertilizer with an organic fish fertilizer you find right at your local home depot or garden shop.

Watermelon Radish

I picked up the watermelon radish at the West Palm Beach farmers market Saturday morning from Jodi at Swank Farms:)
Originally cultivated in China, large, colorful watermelon radishes are a nutritious root vegetable. The Chinese have long believed in the healing powers of this vegetable, thanks to its high photochemical profile including zeaxanthin, lutein and beta-carotene. Watermelon radishes are a rich source of antioxidants, vitamins and minerals.
I tried roasted it first with some EVOO and fresh rosemary. It lost it's brilliant color in the process so I put it to my mandolin raw and did a sweet Asian pickling with fresh ginger and sherry vinegar, it came out awesome and beautiful on the plate!!!

Making fish stock today in preparation for an amazing Thai coconut curry seafood stew for this weekend. I got this beautiful Grouper head and bone from my local fish monger. Just stop in and ask for their fresh fish heads and bones, most the time they will give them to you for free!

Last night was AMAZING! The Chinese/Peruvian fusion meal was a huge hit!! Pictures and the menu will follow later on today :) As a private chef with 20+ years’ experience the techniques come as effortless as my next breath, leaving me free to loss myself in the depths of my creativity to produce the perfect dish :} My imagination does not end at food, I love art in all its forms and the child it wakens inside me!! Try and create something fresh in your kitchen today! Visit a local farm or green market, bring your smartphone and look up a local, seasonal ingredient to experiment with :} You will feel like a pro before you know it. "Culinary Artistry" authored by Andrew Dornenburg and Karen Page is not your average cook book. You won’t find it loaded with recipes, rather ingredients categorized by seasons and what other ingredients will pair well together. It’s a tool that professional chefs use frequently to get their creative wheels turning. I was first introduced to the book when my culinary instructor gifted it to me. Now it is filled with post-it notes and scribbles all through the margins just as you would imagine a painter sketches in a brainstorm pad...
